Types of Chicken


Poussins
  These are very small chickens, weighing from 450-900g / 1-2lb each and usually 6-8 weeks old.  The smaller ones are served one per portion, but the larger ones will sometimes serve two.  Roast, pot roast or casserole, but remember they are tender and have a very delicate flavour.  Also good to grill or broil.

Broilers
  These are small birds that are usually sold as frozen chickens.  They tend to be about 12 weeks old and weigh from 1.2 - 1.6kg / 21/2 - 31/2lb.  They are very versatile and can be cooked by just about any method.  One bird should be good for 3-4 portions.

Large Roasters
  These are usuall young cockerels or hens that have been specially fed so they grow larger.  Good flavoured and tender, they vary in size from 1.8-2.3kg / 4-5lb and will serve 5-6 portions.

Boiling Fowl
  These are older tougher birds, often over 18 months or even older, and can be former egg laying birds.  They are best boiled or stewed, as they will be tough if just roasted.  The flavour however is excellent.  they usually weigh from 1.8-3.2kg / 4-7lb.

Capons
  These birds, which used to be specially injected after castrating, and then fattened, are not supposed to be available now, but large specially fattened birdsare available called 'capon-style' chickens.  They usually weigh from 3.5-4.5kg / 8-10lb and make a good family meal to serve up to 10 portions.
