each and usually 6-8 weeks old. The smaller ones are served one per

or casserole, but remember they are tender and have a very delicate flavour.
Also good to grill or broil.

They tend to be about 12 weeks old and weigh from 1.2 - 1.6kg /
21/2 - 31/2lb. They are
very versatile and can be cooked by just about any method. One bird
should be good for 3-4 portions.

is excellent. they usually weigh from 1.8-3.2kg / 4-7lb.
Capons
These birds, which used to be specially injected after castrating,
and then fattened, are not supposed to be available now, but large specially

10 portions.
