Serves 2
2 medium Beets;
whole, unpeeled, but washed and with the tops removed
Place beets on a tray, in an oven at 350F/ 177C Gas
Mark 4 for 1 hour.
Let cool slightly and slip off skins, mash and serve with butter and/or sour cream.
Squeeze a bit of lime onto them right before serving.
