Baked Swedish Brown Beans


900g / 2lb dried Swedish Brown beans
10g / 2tsp Salt
450g / 1lb lean Salt Pork, cubed
250ml / 8floz ( 1-cup ) dark Molasses
1 stick of cinnamon
3g / 1/4tsp ground nutmeg
1 medium white onion, peeled and sliced


Wash the beans well and soak overnight in enough cold water to cover.
To cook, put the soaked beans in a pan with fresh water, add the salt and salt pork and simmer for 2 hours before stirring in the remaining ingredients.
Place in deep bean pot ( casserole, or dutch oven ) and bake, covered in 325f / 160c / Gas Mark 3 oven for 5 hours, adding more water if beans become too dry.
