Serves 6
6 whole cornish game hens ( prepared )
1 medium onion (diced)
1 celery stalk (diced)
1/2 green pepper (diced)
8 oz./ 230g mixed mushrooms (sliced)
1 whole garlic clove (minced)
2 tbsp./ 60g fresh basil (chopped finely)
1 tsp./5g dried oregano
2 tbsp./60g fresh parsley ( chopped roughly )
6 oz./ 170ml butter (melted)
Pre heat the oven to 3250F / 160C / gas mark 3
Season the birds well inside and out using the salt and pepper.
Put all the ingredients in a bowl ( saving a third ( 1/3
) of the melted butter ) and mix together.
Stuff the birds with equal amounts of the vegetable mix.
Place the birds in a baking dish breast side up, a dish in which all the
birds fit in snugly is to be preferred.
Drizzle the remaining butter over the birds, cover the dish and bake for
1 - 11/2 hrs.
Five minutes before the end of the cooking time uncover the dish and turn
the oven up to 5000F / 260C to brown the birds.
