Baked Ling

serves 6

1.75Kg / 4lb sliced ling
20ml / 2dsp salt
white pepper to taste
3ml / 1/2tsp ground mace
90g / 3oz butter
15ml / 1 tbsp plain flour ( all purpose )
280ml / 1/2 pint hot milk


Dip the fish slices in the flour seasoned with the salt, pepper and mace, shake lightly.  Place in 2 layers in a greased pie dish, dab with butter.
Mix the remaining flour with a little of the milk until smooth, then stir in the remaining milk.
Pour over the fish and bake in a slow oven, 1700C / 3250F / Gas mark 3 for about 50 minutes.

Garnish with snippets of toast
