Baked Stuffed Mackerel

serves 4

60g / 2oz butter or margarine
1 small onion finely sliced
1 tbsp medium oatmeal
60g / 2oz fresh wholemeal breadcrumbs
20ml / 11/2tsp fresh lemon thyme, chopped
20ml / 11/2tsp fresh parsley
salt and pepper
2-3 tbsp hot water, if required
4 mackerel, cleaned & washed thoroughly

In a large frying pan, melt the butter, or margarine.  Cook the onion until soft, but not coloured.  Add the oatmeal, breadcrumbs, herbs and seasoning, and mix well to form a firm stuffing, adding a little hot water to bind, if necessary.

Fill the cavities of the fish with the stuffing, and wrap each on separately in well greased aluminium foil.

Place the fish parcels in a roasting tin, or on a baking sheet, and cook in a preheated oven at 1900C / 3750F / Gas mark 5 for 30 minutes, or until the fish
is firm and flakes easily when tested with a knifepoint.
