Beef with Anchovies

serves 6-8


10 anchovy fillets, ( tinned are fine )
30g / 1oz butter
1Kg / 2lb rolled topside of beef
450ml / 15floz veal or beef stock

equal quantities of :

onions, roughly chopped
carrots, roughly chopped
celery sticks, roughly chopped ( or celeriac )
swede, roughly chopped  
turnip, roughly chopped
leek, sliced thickly

Mash half of the anchovies and blend with the butter;  brown the beef in this anchovy butter.
Place the vegetables in a large casserole dish and put the meat on top, put the remaining anchovy fillets across the top of the beef and add the stock to the casserole dish.
Cover and cook in a pre-heated oven for about 21/2 hours at 1600C / 3250F /
Gas mark 3.
