Beef Stroganoff

serves 4


800g / 13/4lb fillet of beef, cut into fingers
2 onions, sliced into rings
120g / 4oz gherkins, peeled and cut into matchsticks
60g / 2oz button mushrooms, trimmed and finely sliced
60g / 4 tbsp cooked beetroot, finely diced
45ml / 3 tbsp oil
salt and freshly milled black pepper
30ml / 2 tbsp capers
5ml / 1tsp sugar
60ml / 4 tbsp soured cream


Heat the oil thoroughly in a frying pan ( skillet ) and fry the onions until golden brown, stirring frequently.  Gradually add the meat and stir until completely browned.  
It is essential to brown each portion of meat before adding any more.
When all the meat is browned, season to taste and add the gherkins, capers,
beetroot, mushrooms and sugar.
Stir well, cover the pan and cook over a low heat for a further 10-15 minutes.
Stir in the soured cream just before serving.
