Bolognese Sauce
Serves 6-8
15ml /
1tbs Olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
230g / 8oz Beef, minced
230g / 8oz Pork, minced
230g Streaky Bacon, de-rined and diced
2 (400 g) cans chopped Tomatoes
50g / 11/2oz Tomato puree
1 glass red wine
15g /
1tbs dried basil
15g / 1tbs dried oregano
Salt and Pepper
Add the oil to a pan and sweat onions on a medium/low heat for 5 min or until
soft, making sure not to brown them. Then add the garlic and sweat for a further
2-3 minutes.
Add the beef, pork and bacon and let it brown.
Add the tomatoes, tomato puree, wine, oregano and basil and mix thoroughly.
Leave on lowest possible heat for 4+ hours, stirring occasionally.
( add a little water if it dries too much )
Season to taste.
