Broad Beans and Bacon

serves 6


1.35kg / 3lb broad beans
salt
6 rashers of streaky bacon, derinded and cut into small strips
5ml / 1tsp butter


Shell the beans, and cook in boiling salted water until tender.
Just before the beans are ready, fry the bacon, starting off in a little butter to prevent it from sticking to the pan.  When the beans are ready, drain the thoroughly in a colander, and then put them into a heated bowl and mix in the bacon with all its dripping, mix well and serve.
