Burdock with Egg


2lb / 1K  young burdock
milk
salt
2 tbsp / 60ml  butter
lemon juice
1 hard boiled egg, grated
chopped parsley


Clean the burdock and cut into 2 inch / 5cm pieces.  Boil for about 20 minutes until tender in lightly salted water with
a dash of milk added.  Leave to drain.  
  Melt the butter in a pan, lay the burdock in it and fry over a low heat until it is golden yellow.  Sprinkle a little lemon juice on top and a mixture of the grated egg and parsley.
