450g / 1lb courgettes ( zucchini ), trimmed
salt and pepper
60g / 2oz butter
30ml / 2 tbsp freshly chopped mixed herbs, or 1 tbsp dried mixed herbs
juice of 1/2 lemon
Slice the courgettes thinly lengthways and add to a saucepan of
boiling salted water for 1 minute only.
Melt the butter in a pan, add the courgettes and toss in the butter
for 2-3 minutes. Add the herbs, lemon juice and a little seasoning
and toss well until evenly cooked.
Turn into a serving dish and serve.
