450g / 1lb calves brains
15ml / 1 tbsp vinegar
White Sauce
Soak the brains in cold water for 1 hour.
Remove any traces of skin or membrane.
Place the brains in a saucepan and add the vinegar, cover with fresh water,
and boil for 15-20 minutes. Drain and put into cold water to cool.
Dry and slice.
Serve the brains with the white sauce, on a base of green salad.
