Cauliflower Cheese
 

1 medium cauliflower, washed and trimmed
25g / 1oz butter
25g / 1oz flour
300ml / 1/2 pint milk
100g / 4oz cheddar cheese, finely grated
salt & pepper
25g / 1oz fresh white breadcrumbs

Cook the cauliflower in boiling, salted water for about 10 minutes,  drain and place in an ovenproof dish.  
Melt the butter in a pan, add the flour and cook for a few minutes, stirring regularly.  allow to cool slightly before slowly adding the milk, stirring constantly over a low heat, once all the milk has been added bring to a simmer,
stir in 75g / 3oz of the cheese and season well.
Pour the sauce over the cauliflower.  Mix the remaining cheese and breadcrumbs together and sprinkle over th top of the cauliflower.
Brown in the oven for 5-10 minutes at 2000C / 4000F / Gas mark 6

Serve Hot
