Celeriac Remoulade

serves 6

1 large head celeriac
30ml  / 2 tbsp lemon juice
300ml / 1/2 pint homemade mayonnaise
30ml / 2 tbsp snipped chives
30ml / 2 tbsp French mustard
salt & pepper
1 lettuce or curly endive
chopped parsley to garnish

Peel and coarsely grate the celeriac, toss immediately in the lemon juice to prevent discolouration

Add the mayonnaise, chives and mustard, with seasoning to taste and mix well together

 Chill well and serve on the lettuce sprinkled with the parsley.
