Serves 4
1 Large head of Celery
¼tsp / 2g Ground allspice
2 Garlic cloves, peeled and crushed
½ pint / 300ml Single cream
1oz / 30g Fresh breadcrumbs
Pre-heat oven to 200 °C / 400 °F / Gas Mark 6.
Reserve a few celery leaves for garnish, then cut the sticks lengthways into
thin strips.
Cut each strip into 5 cm (2 inch) lengths and put into an ovenproof serving
dish.
Mix the allspice, garlic and cream together and season to taste.
Pour over the celery. Sprinkle with the breadcrumbs.
Bake for about 1¼ hours or until the celery is tender.
Serve hot garnished with the celery leaves.
