serves 2-4
30ml / 2 tbsp olive oil
1 garlic clove, crushed in it's skin and then peeled
1-2 green or red peppers ( bell ), seeded and sliced into strips
225g / 8oz tomatoes, skinned and finely chopped
salt and freshly ground pepper
4 eggs
Heat the oil in a frying pan ( skillet ), add the garlic and fry
until it is golden brown. Add the strips of pepper and let them stew
gently in the garlic flavoured oil until soft. Stir in the tomatoes
and season.
Simmer for 15 minutes, covered with a tilted lid.
Test the seasoning. Break the eggs on top of the mixture, cover the
pan and cook until the eggs are just set.
Serve immediately from the pan.
