Char with Bacon and a Parsley Sauce

serves 4

4 250g / 8oz char ( or brown trout )
12 rashers streaky bacon
salt and pepper
vegetable oil for frying

Parsley Sauce

Clean,wash and dry the fish, top and tail.
Wrap each fish with three rashers of bacon, and season with a little salt and pepper.

Heat the oil in a pan and fry the fish for about 10 minutes on each side.

Make the sauce.

When the fish are cooked, place in a warmed serving dish and pour over the sauce.
 
Serve immediately.
