1 large or 2 medium John Dory, cleaned
sprig or sprigs of fresh fennel
15g / 1/2oz butter
sea salt and freshly ground pepper
1 large lemon sliced
300ml / 1/2 pint West Country cider, or dry white
wine.
Tuck the fennel into the body cavity of the fish. Place
in a buttered ovenproof dish and season well. Arrange the lemon slices
down the centre of the fish, and pour on the cider.
Cover loosely with foil and bake in a pre-heated moderate oven (
1800C / 3500F / Gas mark 4 ) for 30-40
minutes.
