Cod in white Sauce

serves 4

675g / 11/2lb cod fillet, skinned
salt & pepper
150ml / 1/4 pint milk
30ml / 2 tbsp lemon juice
30g / 1oz butter


White sauce

30g / 1oz margarine
30g / 1oz flour ( all purpose )
milk
salt & pepper
pinch of paprika


Cut the fillet into 4 equal portions and place in an ovenproof dish and season well.  Pour the milk and lemon juice over the fish and dot with some of the butter.  Cover the dish and cook in a pre-heated oven at 2000C / 4000F / Gas mark 6, for 20 minutes.
When cook remove the fish and keep warm.  Reserving the cooking liquor.

Melt the margarine and the remaining butter in a pan, stir in the flour and cook for 1 minute.  Slowly add the reserved cooking liquor, stirring constantly, add enough milk to make up to 300ml / 1/2 pint.  Bring to a simmer and cook for 2-3 minutes.  Add seasoning and paprika.

Serve separately.
