Country Stout

 
1lb / 450g black malt
2oz / 60g hops
1lb / 450g granulated sugar
1oz / 30g yeast
1 gallon / 4-5 litres water.

 
Put the water, malt and hops (tied in a muslin bag) into a large saucepan, bring to the boil and boil for 20 minutes.
Remove from the heat and lift out hops, then add sugar and stir until it dissolves.
Let it cool and when just tepid add the yeast.
Let it work overnight covered with a cloth and bottle next day.
It can be drunk 2 days later, but it is better left for a little longer.
