Creamed Spinach

serves 3-4


1.5kg / 3lb fresh spinach, washed and coarse stalks removed
30-60g / 1-2oz butter
45ml / 3 tbsp single cream ( pouring cream )
salt and pepper
pinch of ground nutmeg


Put the washed spinach in a saucepan with a little water.  Heat gently, turning the spinach occasionally.  Bring to the boil, reduce the heat, and cook gently for 10-15 minutes until very soft.
Drain thoroughly and pass through a sieve or use a blender.  Add butter, cream, seasoning and nutmeg to the puree.
Return to the pan and gently re-heat.

Serve in a warmed dish.
