Baked Kebab
Serves 3-4
1lb / 450g lean minced ( ground ) Lamb or Beef
1tsp / 5g Ginger paste
1tsp / 5g Garlic paste
2 green chilies, ground or finely chopped
2tsp / 10g Garam Masala
1/4pint / 150ml natural Yoghurt
1/4tsp / 1.5g meat tenderizer
2 sprigs Coriander, finely chopped
1tsp / 5g Chili powder
2 Eggs
1 Onion, peeled and thinly sliced, and fried until crisp
Salt to taste
2 green Chilies chopped
Juice of 1 Lemon

Pre-heat oven to 1800C / 3500F / Gas Mark

Mix together the mince, ginger, garlic paste, ground chili, garam masala,
yoghurt, meat tenderizer, half of the finely chopped coriander, chili powder,
eggs and crispy fried onions.
Mix well and season with salt. In a well-greased baking tray,
spread the mince to a depth of 1/2inch / 1cm.
Brush with oil and bake for 20 minutes, reduce the temperature to
1500C / 3000F / Gas Mark 2 for a further 20-30 minutes,
or until all the liquid has evaporated.
Cut into 2inch / 5cm squares, garnish with the remaining fresh coriander, and sprinkle with lemon juice just before serving.
