Egg and Ham Bake

serves 8

6 eggs, hardboiled, sliced thin
100g / 4oz lean cooked ham, Cut into narrow strips
225g / 8 oz emmental cheese, grated
60g / 2oz butter
250ml / 8floz milk
150ml / 1/4 pint single cream ( pouring cream )
salt & freshly grilled white pepper
pinch of grated nutmeg
pinch of garlic powder
45ml / 3 tbsp fresh white breadcrumbs


Grease an ovenproof dish with butter.  
Melt half the butter in a saucepan, stir in the flour and cook for 2-3 minutes, stirring constantly, add the milk slowly, stirring all the while.  Bring to the boil,
stir in the cream and season with salt and pepper, the nutmeg, and garlic powder.
Fill the baking dish with alternate layers of egg, ham and grated cheese, covering each layer with a little of the sauce.
Finally cover with the breadcrumbs and dot with the remaining butter.
Bake in a pre-heated oven at 2200C / 4250F / Gas mark 7 for 30 minutes.
