Offal
( Welsh Recipe )
serves 4-5
1 kilo / 2 lb liver ( pig's, lamb's, or ox )
120g / 4oz breadcrumbs ( from day old bread )
90g / 3oz suet, diced
2 large onions, finely chopped
10g / 2 tsp finely chopped fresh sage
salt & pepper
30g / 1oz plain ( all purpose ) flour
Dash of worcester sauce
browning
Wash and mince the liver
Put all the ingredients into a bowl and mix thouroghly, adding salt & pepper to taste, and roll into small balls ( about 4cm / just over an inch in size )
Place the faggots in a large greased ovenproof dish, cover with foil and heat in a moderate oven ( 3500 F / Gas mark 4 ) for 40 minutes. Remove the foil 10 minutes before the end of the cooking time to brown the faggots.
Work the flour into the juices to make a paste, and add boiling water to make gravy, add browning if necessary.
Traditionally served hot with mushy peas, and mashed potatoes
