Finnish Three-Meat Ragout

Serves 4

150g / 5oz lean Lamb shoulder
150g / 5oz lean pork shoulder
150g / 5oz lean beef round
5g / 1tsp Salt
2g / 1/2tsp Allspice
White Pepper
2 large White Onions, cut into 1/4-inch thick slices
fresh Parsley, chopped

Preheat oven to 300f / 150c / Gas Mark 2 degrees

  Cut the meat into 1-inch cubes.  In an enamelled, cast-iron pot or other deep oven proof casserole, layer the meat, salt, allspice, white peppercorns, and onion.
Cover lightly and bake for 5 hours, or until the meat is very tender.
  Sprinkle with chopped fresh parsley and serve over mashed potatoes or mashed potatoes and rutabagas ( swede or yellow turnip ).
