Fish Cakes

makes 6-8


250-375g / 1/2  to 3/4lb cooked fish, flaked.  any white fish, and some smoked fish.
250g / 8oz cooked potato, mashed
yolk of a large egg
60g / 2oz fresh white breadcrumbs
30ml / 2 tbsp fresh parsley, chopped fine
salt and pepper
60g / 2oz butter


Excluding the butter.  In a large bowl, mix the ingredients, seasoning to taste. Chill for 30 minutes.

Separate the mixture into portions, a number of small ones, or fewer larger portions.  In a suitable pan melt the butter.  Have the fat about 1cm / 1/4-1/2 inch deep, so that the cakes brown at the sides. Cook the large cakes for about 4 minutes a side until golden, the smaller cakes will cook quicker.

Drain on kitchen paper, serve hot.
