Fried Cassavas

two good sized cassava roots
2 cloves garlic, crushed
4 tbsp / 60ml  corn oil
salt
pepper


Peel the cassavas, wash, dry and cut into 11/2 inch / 4cm cubes.
  Mix the crushed garlic with the cassava, cover and leave to stand for 1/2 hour.  Heat the oil in a good-sized pan and fry the cassava cubes until they are cooked through.  Remove the cassava from the pan and leave to drain on kitchen towel before sprinkling with the salt and pepper.
