Fried Mustard Greens

 
11/2 lb / 750g  mustard greens, washed, de-ribbed and well drained
3 tbls / 90ml  oil
2 medium onions  peeled and chopped
1 clove of garlic
2 tsp medium curry powder
2oz / 60g lean beef mince
salt and freshly ground black pepper

 
Cut the mustard greens into fine strips.  Fry the onion in the oil until glazed, add the curry powder and fry for a minute or two, then add the mince and garlic and fry for about 10 minutes, over a medium heat, stirring gently.  Add the greens and fry for a further 10 minutes.  The mustard greens should still be crisp.  
  Season to taste.
