Garlic Mushrooms

serves 4


450g  / 1lb large button mushrooms or oyster mushrooms
a little lemon juice
90g / 3oz butter
15ml / 1 tbsp olive oil
3 garlic cloves, chopped coarsely
30ml / 2 tbsp fresh parsley, chopped
salt and freshly ground pepper


Slice the mushrooms or quarter them.  Sprinkle them with a few drops of lemon juice to keep them white.  
Melt the butter with the oil in a large frying pan ( skillet ), add the mushrooms and fry gently until they exude their juices, stirring them around all the time with a wooden spoon.
Add the garlic, parsley and season with the salt and pepper.  Stir well.
Leave to cook over a moderate heat for about 5 minutes more, stirring from time to time.
Serve hot.
