North German Pepper Pot

serves 4

2 onions, cut into rings
675g / 11/2lb braising steak, cut into 3cm / 1 inch pieces
150g / 5oz piece lean boiled ham, cut into 3cm / 1 inch pieces
45ml / 3 tbsp oil
15ml / 1 tbsp paprika
salt and freshly milled black pepper
1 red chili, whole
250ml / 8floz red wine
225g / 8oz potatoes
5-8ml / 1-11/2tsp sugar


Heat the oil in a pan, add the onion, ham and beef and fry over a high heat for 5 minutes, stirring constantly.  Add the paprika, salt and pepper, the whole chili and red wine, stir well.  Cover the pan and braise over a moderate heat for 40 minutes.
Meanwhile peel the potatoes and cut them into 2.5cm / 1 inch cubes.  When the 40 minutes are up, add the potatoes to the pan, leave the lid off and cook for a further 20 minutes over a low heat.  
Finally season to taste with sugar.
