Ginger Beer


Take the carefully peeled rinds of three lemons.  Smash half a pound of fresh ginger until it begins to break up.  Put the rinds, the ginger, two pounds of sugar and two ounces of cream of tartar into a big pot and pour on two and a half gallons of boiling water. Let it cool until the liquid is lukewarm and add two tablespoonsful of yeast, either fresh or dried.  Let it all cool and stand for twelve hours.  Add the juice of three lemons, strain and bottle.
It will be splendidly fizzy in a couple of days.
