Kale with Sweet Potatoes
Serves: 4
450g / 1lb. Kale or Beet greens, washed, stemmed and chopped
350g / 3/4lb Sweet Potatoes, peeled and diced
115g / 4oz Onions, finely chopped
1 clove Garlic, minced
250ml / 8floz chicken stock, more if needed
2g / 1/4tsp Nutmeg, grated
2g / 1/4tsp Salt (optional)
10g / 2tsp unsalted butter, melted
Place the washed kale ( still damp ) in a heavy non-stick skillet over medium to
high heat, cover and simmer for 3-4 minutes or until the kale wilts.
Stir in the remaining ingredients, except butter, and pepper to taste.
Partially cover the skillet and simmer for 20-25 minutes or until potatoes are
tender and liquid has evaporated.
Stir in butter.
