Serves 4
8 oz / 225g self raising flour
pinch of salt
3 oz / 85g shredded suet
1 lb / 450g stewing steak, cut into small cubes
1 onion, peeled and chopped
salt and freshly ground black pepper
a little water or stock
Mix the flour, salt and suet together, then add sufficient cold water to
form a firm dough.
Turn out onto a lightly floured surface and roll into a rectangle about 1/4
in / 6mm thick.
Mix the steak and onion together and spread evenly across the dough leaving
a border; season to taste.
Sprinkle with a little water or stock, then roll up like a swiss roll, dampening
the ends to seal them.
Wrap the pudding lightly in greaseproof paper or foil and then tie up in
a cloth.
Boil or steam in a covered saucepan for 3-31/2 hours.
Be sure to keep check on the water level.
