Serves 4
900g / 2lb Potatoes
300ml / ½ pint Real Ale
175ml / 6floz Single Cream
2 Large Onions, peeled and thinly sliced
60g / 4tbs Butter, very cold
Salt and freshly ground Black Pepper
Pre-heat oven to 230°C / 450°F / Gas Mark 8
Scrub ( leaving the skin on ) the potatoes well and slice them
thinly.
Place alternate slices of onion and potato in a buttered casserole dish,
packing closely together.
Season each layer lightly.
Pour over the beer and add knobs of butter on top, evenly distributed.
Bake for 10 minutes.
Reduce the temperature to 180°C / 350°F / Gas Mark 4 and bake for
a further 40 minutes.
About 10 minutes before the end of baking, pour the cream evenly over the
top and return to the oven.
