Rolled and Stuffed Breast of Lamb

serves 3-4

900g / 2lb breast of lamb, boned
Sage and onion stuffing
a little oil or fat
seasoning

Lay the breast out flat trim any excess fat and spread with the stuffing, roll up and tie securely.
Weigh the roast.
Brush the lamb with oil or melted fat and season well.
Allow 25 minutes per 450g / 1lb plus 25 minutes cooking time.
Place in a roasting tin and cook in a pre-heated oven at 1700C / 3250 / Gas mark 3
