4 salmon steaks ( 120-185g / 4-6oz each )
1 onion, very finely sliced
15ml / 1 tbsp oil
15ml / 1 tbsp lemon juice
5ml / 1tsp worcestershire sauce
salt and pepper
150ml / 1/4 pint single ( light ) cream
watercress to garnish
Wipe the salmon steaks and put into a lightly greased shallow
casserole in a single layer. Fry the onion gently in the oil until
soft but not coloured. Stir in the lemon juice, worcestershire sauce
and seasonings and spread over the salmon. Pour the cream over the
steaks and cover the dish.
Cook in a moderate pre-heated oven at 1800C /
3500F / Gas mark 4, for about 30 minutes or until the fish is
tender.
