Vinaigrette
serves 4-6
2.5ml / 1/2tsp white wine vinegar or tarragon
vinegar
7.5ml / 1/2 tbsp dry white wine
3.5ml / 3/4tsp dijon mustard
1 large garlic clove, sprinkled with salt and crushed
75ml / 5 tbsp virgin olive oil
salt and freshly ground black pepper
Put the vinegar ( good wine vinegar is essential for vinaigrette
) into a small bowl. Add the white wine, then stir in the mustard and
the crushed garlic.
Add the olive oil gradually, beating it in with a teaspoon or fork, so that
it makes an emulsion with the vinegar, mustard and garlic. When you
have added all the oil, season the vinaigrette with more salt, if necessary,
and with pepper. ( Some people also like to add a pinch of sugar
).
