Irish recipe
2 1/2 lbs / 1K medium ground pork
2 1/2 lbs / 1K fine ground pork
2 1/2 lbs / 1K plain bread crumbs
4 eggs lightly beaten
8 cloves garlic peeled and crushed
1tbs / 15g salt
3 tsp / 15g thyme
3 tsp / 15g basil
3 tsp / 15g marjoram
3 tsp / 15g black pepper
1Pint / 1/2L ice water
Mix the ingredients together thoroughly keeping cold.
Stuff the mixture into casings making 21/2 inch links
( sausages ) or pat into small compact pattys.
Refrigerate over night before freezing.
Defrost to cook, and fry to golden brown.
